Yummy alternatives make dieting easier


You’re two weeks into that New Year’s resolution diet and want a satisfying snack.
Three healthy and easy to make treats are mini-rice cake stacks, peanut energy bars and strawberry and cream cheese sandwiches.
Mini-rice cake stacks
Mini-rice cake stacks are by far the easiest of the recipes to make.
Buy a bag of the mini-rice cakes, peanut butter and bananas. My favorite flavor of rice cake for this recipe is apple cinnamon. Take the mini-rice cakes and spread peanut butter on each piece.
Slice the bananas and put slices on half of the rice cakes. Place the rest of the rice cakes on top of the banana-covered rice cakes. Bag them up and they are all set to go for an easy eat on the way to class.
Strawberry and cream cheese sandwiches
Strawberry and cream cheese sandwiches may sound disgusting, but there are more ingredients added to this than the title implies.

For this recipe, you need 1 tablespoon of reduced fat cream cheese, 1/4 teaspoon honey, two slices of whole wheat bread and two medium-sized sliced strawberries. The recipe also calls for freshly grated orange zest if desired.
